Panipuri has changed a lot over time. Originally referred to as “gol gappa,” the delicacy was a little, hollowed-out, fried wheat shell stuffed with seasoned mashed potatoes and served with water that had tamarind or mint flavors.

As time went on, other fillings and flavors of flavored water appeared, reflecting regional tastes and ingredient supply.
