A panipuri is a deep-fried crisp round hollow puri that is filled with a mixture of flavored water, tamarind chutney, chili powder, chaat masala, potato mash, onion, or chickpeas.

Over time, Panipuri underwent substantial change. Originally known as “gol gappa,” the delicacy was a little, hollowed-out, fried wheat shell filled with seasoned mashed potatoes and served with tamarind or mint-flavored water.

The filling and flavored water evolved over time to reflect regional preferences and ingredient availability.
