Born on October 1, 1990, in Austin, Texas, Hopkins attended Clear Lake High School and went on to play college football at Florida State.

Hopkins recorded 19 hits out of 27 field goals in his freshman year while he played at Florida State. During a game against Clemson, Hopkins made a 55-yard field goal in 3 seconds.

The Buffalo Bills had drafted him in 2013, as 177th pick, in the sixth round of the NFL Draft for that year. He had signed a four-year deal with the Bills.

In 2021, Hopkins got signed into a three-year deal with the Los Angeles Chargers, which will expire in 2024.
