His parents were very supportive of his desire to play football and with their support, he joined Athletic Bilbao’s youth system in 2011, from CD Aurrerá de Vitoria, making his debut as a senior with the farm team in the 2014–15 season, in the Tercera División.

Simón was called up to the main squad for pre-season by new first-team manager José ngel Ziganda on 2 June 2017, but continued to play primarily for the Bs. He signed a contract extension until 2023 on July 13, 2018, and was loaned to Segunda División side Elche CF two weeks later.

Simón was recalled by Athletic on August 15, 2018, following the departure of Kepa Arrizabalaga and the injury of Iago Herrern. He appeared to be behind the older Lex Remiro in the selection process at first, but he made his professional – and La Liga – debut five days later, starting in a 2-1 home triumph over CD Leganés
However, Herrern returned to the starting lineup in October 2018 after recovering from an injury, with Simón limited to Copa del Rey appearances for the next four months.
Simón was awarded the #1 squad number for the 2019-20 season and started the season as the first choice, keeping a clean sheet in an opening-day triumph over FC Barcelona.
He maintained his outstanding form throughout the season, missing only two games due to illness and playing in 33 league games, surrendering 29 goals to finish third in the Zamora Trophy standings.
In August 2020, Simon signed a new contract with the club running to the summer of 2025, without a buyout clause.
