Noma Restaurant which ranks top on the list of world’s best restaurant is closing because it has reached a breaking point it terms unsustainable, and will now transform into a food lab.

“In 2025, our restaurant is transforming into a giant lab – a pioneering test kitchen dedicated to the work of food innovation and the development of new flavors”, the restaurant wrote in a statement published on its website.

About Noma Restaurant

Noma Restaurant was set up by Claus Meyer and René Redzepi in 2003, and it is renowned for the painstaking process they use to transform foraged and local ingredients.

The René Redzepi-owned restaurant in Copenhagen has so far contributed to the definition of very expensive, foraged, and culinarily innovative food.

Now transforming into a food lab, Noma is set to produce consumer food products like Wild Rose Vinegar and Smoked Mushroom Garum.

Noma’s style of cooking has become known as New Nordic. The restaurant is known for fantastic, mouthwatering dishes like Moldy Egg Tart and Reindeer Heart Tartare.

In 2021, Noma earned three Michelin stars, and currently ranks top on the list of the World’s 50 Best Restaurants list.
